Delect Sorrel Glazed Sponge Cake

Add a festive touch to your holiday spread this season with Delect Sorrel Glazed Sponge Cake! Showcasing the decadent flavour of Delect’s Sorrel Cordial, this Delect Sorrel Glazed Sponge Cake is wrapped in a beautiful red and white design that is sure to make you feel the Christmas spirit! Make this treat for friends and family this holiday to add a little extra Christmas cheer to your holiday festivities!

 

Total Time: 50 minutes

 

Ingredients – Sponge Cake

2 cups all-purpose flour

2 tsp baking powder

3 large eggs

1 tsp Delect Salt

2 cups granulated sugar

1 tsp vanilla

1/2 tsp almond flavouring

1 cup milk

4 tbsp butter

White glaze

1 cup icing sugar

1/4 tsp cream of tartar

1 tsp almond flavouring

Delect Sorrel Glaze

1 Cup Delect Sorrel Concentrate

1/2 cup water

1 tablespoon cornstarch

 

Method – Glazes

White

Mix well until a thick consistency is achieved.

Add a few drops of water, if needed, to reach pouring consistency.

Sorrel

Mix cornstarch with a few drops of water to make it a thick pouring consistency.

Add sorrel concentrate and water to a saucepan and let it reach boiling point.

Add cornstarch a little at a time till it reaches a thick but pouring consistency

 

 

Method – Sponge Cake

Preheat oven 350°F or 175°C.

Sift all dry ingredients except sugar.

In a large bowl, whisk eggs on high speed for 5-6 mins until foamy and form stiff peaks.

While still whisking, add sugar, 1 tablespoon at a time, until finished.

Meanwhile, melt your butter on a low flame then add milk and flavourings.

Fold flour alternately with milk.

Pour into an 8” greased Bundt pan and bake until golden brown for 25 minutes until a toothpick comes out clean.

Allow to cool for 10 minutes and turn out on a serving plate.

Gently pour white glaze in a zig-zag motion on the cake and allow to cool then pour your Sorrel Glaze in the same motion.

Serve and enjoy!
