My passion for food started when… I was selected to do food and nutrition while attending Anchovy High School. My instructors encouraged me to acquire a higher standard in the culinary arts.
Where else were you trained?
After leaving Anchovy High, I trained at the Wexford Hotel.
I have been in the business… for the past six years.
How long have you been at Round Hill?
I have been working at Round Hill Hotel and Villas since November 2013.
What is your must-have dessert ingredient?
I would say love, because what you put in is what you will get out.
What keeps you passionate about desserts?
I’m passionate about desserts because of how they look and taste. It’s that knowledge too, of knowing that it brings the meal to a perfect end — this is what gives me that drive to make it even tastier and delicious.

Do you have a favourite dessert?
Chocolate lava cake.

Grasshopper Pie (Dessert Pic#1)
Ingredients
Filling:
1 litre heavy cream
1 cup Crème De Menthe liqueur
Pinch of salt
15g gelatin
12 oz melted chocolate
Method:
Whip heavy cream on high speed, at a soft peak remove from mixer and add Crème de Menthe liqueur, melted chocolate and salt.
Mix with whisk until incorporated.
Melt gelatin with 5 ounces of water, then add to mixture, ensure gelatin is hot, so mixture does not set while combining.
Pour on a thin layer of vanilla or chocolate cake as desired.
Place in refrigerator to set for 1/2 hour or 2 hours, depending on the climate.
Cut slice as desired and add garnish, whip cream or berries of your choice.
Pie:
Ingredients:
8oz butter (room temperature)
1.5 lbs cocoa powder
2 eggs
6 oz sugar
Method:
Pour ingredients into a mixing bowl and mix until fully combined.
Roll and place dough on a baking sheet.
Bake at 350oF until golden brown.
When cool, fill with mint mixture and refrigerate until set.
