The West India Table – Part 2
“The Vegetables and Greens stage of the brunch was a recognition that, since the 18th century, fruits and vegetables were, and still are, consumed, grown, bartered, traded and gifted all across the island by people from all walks of life. So, whether on a plantation in the provision grounds or kitchen gardens or in the countryside or city centre from a roadside vendor, freshly picked fruits and vegetables have long been the main sustenance for the people of Jamaica. We started with modern preparations of Caribbean produce and paired them with some more non-traditional Caribbean ingredients and methods of preparation.” — Jamaica Food & Drink Festival Brunch at the Gallery co-hosts/caterers and The West India Table conceptualisers Michelle and Suzanne Rousseau.
