Orange Pan Seared Dolphin Salad
Here is an idea that will get your taste buds jumping and your fitness instructors cheering. It’s not very often you can say a meal is good for you and tastes great, however, thanks to Chef Stephen Hamilton we may just have found the perfect blend of fun and flavour.
The Orange Pan Seared Dolphin Salad is served as an appetizer on most occasions but this is LENT so let’s give up over stuffing our belly and take this one to town. According to the Chef “I chose dolphin on this occasion because I wanted something extra special but you can use salmon and it will be just as nice.”
To prepare this 5 minutes dish simply turn your stove top to sear temperature (really high) squeeze half of a fresh orange into the pan then immediately add the fish. Once you get the searing turn the meat onto the other side to cook evenly and distribute the flavour equally. As mentioned this will not take more than 5 minutes, so have your veggies ready.
For your fresh greens, tossed salads are available in the supermarket, no hassle, add your pan seared fish along with some apple slices and crushed tortilla chips for body and “pow” you have yourself the nicest salad you can eat over and over again.
