June Plum & Ginger Juice
June plum juice is a refreshing taste of Jamaica. “I keep mine simple with fresh June plums, ginger and sugar, letting that lovely tart flavour shine through,” says Shanice Gore.
Makes: Approximately 1 litre
Ingredients
6 medium June plums 1–2 tbsp fresh ginger, chopped 4 cups water ¼–½ cup sugar, to taste Ice, for serving
Method
1. Wash the June plums thoroughly. Cut the flesh away from the fibrous seeds and discard the seeds.
2. Place the flesh in a blender with the ginger and water. Blend until well combined, working in batches if needed.
3. Strain through a fine sieve into a jug, pressing gently to extract the juice.
4. Stir in the sugar until dissolved. Start with ¼ cup and adjust to taste.
5. Refrigerate until chilled, then serve over ice.
Shan’s Tip
Taste before adding all the sugar — the sweetness of the June plums will vary. I like to keep a little tartness, with just enough ginger for a refreshing kick.
